Living Wellness LIVE Episode 3 Recipes

What an amazing Living Wellness LIVE Episode 3 we had this past Friday! We had such a great time learning from Stefanie Peters from Lady Boss Empire, Carisa Rasmussen from Clean & Lean, and Kelley Suggs from Lithe Wellness Solutions. Also, if you missed our show in-person, you can still enjoy the amazing THREE course meal Kelley Suggs made by recreating those simple yet super flavorful dishes in your own kitchen. All three recipes are below!

For those of you who are not familiar with Kelley Suggs, she is a two-time guest on the Living Wellness LIVE show and certified health education specialist (CHES) at Lithe Wellness Solutions. You can learn much more about Kelley here!

This show's cooking segment focused on re-creating healthier alternatives to a few favorite comfort foods. Kelley did an amazing job making these recipes not only simple, but flavorful and full of nutrients. Just like Kelley said in the show, each time you eat you are making a choice. Kid Approved Caesar Salad Dressing Recipe

Ingredients: 

  • 2 small garlic cloves, minced (fermented if possible, recipe coming soon!)
  • 1 teaspoon anchovy paste
  • 1 tablespoon fresh squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 cup mayo, (better price here)
  • 1/2 cup Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Combine minced garlic, anchovy paste, lemon juice, Dijon mustard, and Worcestershire sauce in a bowl and whisk. Add mayo, Parmesan cheese, salt, and pepper and whisk until well combined.
  2. Serve!

Savory Beef Stroganoff Recipe

Ingredients

  • 2.5 cups mushrooms, sliced
  • 1 clove garlic, finely chopped
  • 1.5 cups bone broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1.5 lbs grass-fed ground beef
  • 1/2 medium onion, chopped
  • 4 springs parsley, chopped
  • 2 tablespoons arrowroot powder (better price here)
  • 1.5 cup sour cream
  • 3 cups lentil pasta (check out this post for all my fav GF pasta options)

Instructions

  1. In a large skillet, bring mushrooms, bone broth, garlic, salt, and pepper to a simmer until mushrooms are tender. Meanwhile in a medium skillet, brown ground beef with onions. Add parsley once beef is almost browned.
  2. When mushrooms are done, keep skillet over medium-low heat and add arrowroot to skillet. Whisk quickly to thicken sauce. Fold in sour cream.
  3. Combine ground beef to mushroom cream sauce and keep on low heat while you make the lentil pasta according to the directions on the package. 
  4. Serve immediately and enjoy!

Melt-In-Your-Mouth Chocolate Cake (Grain Free, Nut free)

Ingredients

  • 5 pastured organic eggs
  • 1/2 cup organic cane sugar
  • 7 ounces grass-fed organic butter + 1 ounce for greasing pan
  • 10 ounces chocolate chips
  • 1/2 to 1 teaspoon cocoa powder

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Adjust one oven rack to be at the lowest setting and one in the middle.
  2. In a mixing bowl, whisk eggs and sugar together. Set aside. 
  3. In a small sauce pan, melt chocolate chips with butter whisking constantly. Remove from heat. Slowly combine with egg/sugar mixture.
  4. Lightly butter spring form pan and dust with cocoa powder. Pour chocolate mixture into spring form pan.
  5. Fill separate cake pan or similar sized pan half full with water. Carefully place this on the bottom rack of the oven. Then place the filled springform pan on the middle rack.
  6. Bake for 60-75 minutes. Allow to cool and enjoy!
