Christina Zaczkowski and Ashley Darkenwald began Living Wellness Live as a way to reach more people. The show has a live audience and is filmed and produced! Our message is one that of hope and encouragement to those desiring to live a healthy holistic healthy lifestyle. We believe you don’t have to sacrifice enjoyment of life to be healthy-- you can have both!
The three components of the Living Wellness Live show include an interesting and insightful interview, a "body" segment, and a kitchen segment. We have en educational bent and an inspirational message about wholistic health.

The recipes below are extra special because restaurant owners usually do NOT share their secrets. But Phil and Diane from POUR are AMAZING and have shared a few recipes from their BRAND NEW Sunday brunch menu. I highly encourage you to check out their brunch at POUR Wine Bar and Bistro at either the Otsego or Champlin location*. I've had it a few times myself and I've been delighted! Smoothie Bowl Granola

Time: 20-30 minutes
Category: Breakfast
Instructions
- 1 1/2 cups gluten-free rolled oats
- 1 cup raw, unsalted cashews*, coarsely chopped
- 1 cup unsweetened flaked coconut
- 3-4 tablespoons pure maple syrup
- 2 tablespoons softened unrefined coconut oil
- scant 1/4 teaspoon fine grain sea salt **
Instructions
- Preheat your oven to 300° F and line a medium-sized baking sheet with parchment paper.
- In a large bowl, combine oats and cashews together. Stir in the maple syrup, coconut oil and sea salt.
- Spread the mixture in a single layer over the parchment paper. Sprinkle coconut flakes on top.
- Bake for 15-25 minutes until golden stirring at least once half way through. Allow to cool and enjoy!
* Notes from POUR: We often use this recipe as our base for the granola and switch things out to keep it different and exciting (since that’s what foods all about!). Sometimes we use pumpkin seeds, walnuts, hemp seeds or whatever’s on sale at Whole Foods’ bulk section! During the Living Wellness LIVE event, we used a combination of chia seeds, pecan, walnuts, and cashews.

Cornbread Waffle

Time: approx. 30 minutes
Category: Breakfast
Ingredients
- ½ cup masa harina
- ¼ cup fine/medium ground cornmeal
- ¼ cup gluten free oat flour
- 1 teaspoon baking powder
- ½ teaspoon sea salt
- 1 egg or vegan egg (1 tbsp chia seeds* placed in 2.5 tbsp room temperature water for 10 minutes to “bloom” or gel)
- ¾ cup unsweetened almond milk
- 2 tablespoons coconut oil, melted and slightly cooled
- 1 1/2 tablespoons agave
Instructions
- Preheat waffle maker to just over medium heat and grease if necessary.
- Combine all the dry ingredients together in a large bowl.
- In a small bowl, combine the almond milk, melted coconut oil, agave, and bloomed chia seed. Whisk together.
- Combine the wet ingredients into the dry and whisk gently until just combined. Do not over-stir.
- Let sit batter sit for 7 minutes to allow it to thicken and become airy.
- Scoop portion of the batter onto the hot waffle maker and gently spread around with a spatula or butter knife.
- Cook until golden brown and serve immediately.
