If you could only eat one food for the rest of your life what would it be?
I was recently asked this question and had to laugh at my response. Pizza. Pizza is truly my favorite food. The doughy crust, melted cheese, endless toppings...what's not to love! Well, as I've shared before, that doughy crust does not love me. It's been two years now since I needed to remove gluten from my diet for medical reasons (please see disclaimer at end of post regarding diet changes). As I shared in this post, these past two years have been really challenging but also very rewarding. I've had to re-learn how to cook, grieve the loss of favorite foods and eating at many restaurants due to my inability to eat foods that have been cross-contaminated with gluten, but I've also had the amazing opportunity to share my story and recipes with others. This has been such as blessing.
Over the past two years, I have been searching far and wide for an amazing gluten-free and nutritious gluten-free pizza. Time and time again, I've tried new recipes thinking that this is going to be "the one." Let me save you a little heart-ache...I have not found a pizza crust to match the amazing doughy texture of gluten, but I have found some pretty great alternatives.
My top choice is Sassy Spoon's (gluten-free restaurant in Minneapolis, MN) gluten-free yucca crust. I have not had the guts to ask if they'd share their prize recipe, nor have I attempted to make this from scratch myself...at least not yet.
My second choice, is the recipe I will share below. Simple Mills has a huge variety of really great, clean gluten-free products. Yes it does come in a box, but with all the other things I home-make, I will gladly allow someone else to figure out how to concoct a pizza crust for me (for now!). Simple Mills does have a pizza crust mix which I have tried and admit the texture is better than the recipe below; however, my husband and I do not tolerate cauliflower well so this is a no-go for us. On that note, there are endless recipes online for cauliflower pizza crust that may be a wonderful substitute for gluten crust. I just cannot attest to how these taste. Please share in the comments though if you've tried one and found it to be amazing for other readers to know.

Easy Homemade Pizza (Gluten-free)
Serves 2-4

Ingredients
Crust
- 1 box Simple Mills Flatbread Mix (Link below)
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1 tsp. Italian seasoning
- 2 tbsp. nutritional yeast (Link below)
- 1 tsp. Nutiva palm shortening (Link below)
Toppings
- 7 oz. tomato sauce (if unseasoned, add Italian seasoning, mineral salt, garlic & onion powder), divided (Link below)
- 1/2 cup mozzarella cheese, divided (more if desired)
- 16-20 slices pepperoni, divided
- Mineral salt, Italian seasoning, onion powder, garlic powder to taste
- Caramelized onion (1 medium onion, 2 tbsp. butter, 2 tbsp. olive oil) and 1/2 cup garlic scapes or 6 cloves garlic, crushed
- Any other toppings you like on your pizza (we also love Italian sausage, artichoke, mushrooms)
Instructions
Preheat oven to 350 degrees.
Melt butter and olive oil in sauce pan over medium low heat. Chop onion and garlic scapes or cloves. Add onion and garlic to sauce pan. Saute onion and garlic until onion translucent or until desired doneness. If you tolerate or prefer raw onion on your pizza, then you may skip this step.
- While onion and garlic are cooking, prepare Simple Mills Flatbread according to the instructions on the box.
- After dough has sit for 5 minutes as recommended on box, add onion powder, garlic powder, Italian seasoning, and nutritional yeast. Mix well and divide dough into 2 equal portions. Gently pat down into two 7" circles on pre-greased cookie sheet.
- Bake in oven for 15 minutes (or until edges just starting to brown slightly) and remove from oven.
- Add toppings in preferred order to each pizza (we typically do onion/garlic mix, sauce, cheese, pepperoni and more onion/garlic). Sprinkle additional Italian seasoning on top if desired.
- Place pan in oven for 5-7 minutes more. Next turn on broiler and broil 4 minutes (watching closely) to slightly brown edges of cheese.
- Remove from oven, allow to cool slightly before cutting, and enjoy!!
