Today on the Living Wellness Blog we're excited to bring our second Living Wellness LIVE show into your own kitchen with two amazing recipes! Living Wellness Facilitator Bill Evans created these fabulous dishes for us this past Friday at Living Wellness LIVE. As Christina said in our show, Bill Evans is one of our talented Living Wellness Facilitators and also a food enthusiast. He hasn't always been super creative in the kitchen though. Bill's healthy cooking journey actually only started about 15 years ago when he decided that he wanted to find out how to make the commercially prepared foods he enjoyed at home without the additives. Bill also credits hunger and timing as sources of cooking inspiration as his work and hunger schedule allowed him to whip up new dishes for his wife to enjoy when she got home from work. Gotta eat to live right? :)
Trying new dishes and sharing them with others are some of Bill's favorite parts of cooking, but even more so, Bill has said that he loves finding foods that taste good and nourish our bodies at the same time. So, without further ado, here's two delicious and nourishing recipes. Enjoy!
Whitefish Fajita Stuffed Peppers

Servings: 2-4 servings

Ingredients:
The fish:
- 1 pound of mild whitefish fillets (bass, striped bass, or even crappie), rinse and pat dry
- 2 teaspoon (tsp) chili powder
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp ground cumin
- ¼ tsp cayenne pepper
- ¼ tsp black pepper
- ½ medium lemon sliced
The pepper & fixings:
- 1 medium yellow onion chopped
- 3 cloves garlic chopped
- 1 medium tomato chopped
- 1 tsp olive oil
- 1 medium avocado peeled, pitted and cubed
- 4 large bell peppers seeds removed and top cut off
- 1 cup cooked brown rice
- ¼ cup good quality picante sauce (we use homemade, recipe here!)
Instructions:
The fish:
- Preheat oven to 350 degrees F.
- Combine all of the dry ingredients from the fish part and mix.
- Coat the both sides of fish with the dry mixture and place into a lightly oiled baking dish. I prefer a good quality olive oil. Place sliced lemon on top of fish. Cover and bake at 350 degrees F for approximately 20-23 minutes. You’ll want the fish to be flakey, fully cooked, but not over done.
- When fish comes out of the oven go ahead and heat the oven up to 450 degrees F.
The peppers & fixings:
- Heat a sauté pan with the olive oil at medium heat and sauté the garlic and onion until done. Add the chopped tomato until softened. Add avocado until just softened as well.
- Gently mix the rice, flaked fish, garlic, onion, tomato, picante sauce, and avocado then stuff into peppers.
- Cover and bake the stuffed peppers at 450 degrees F. for 25-30 minutes until the peppers are cooked to firm but not still crunchy.
- Serve and enjoy!
Notes: Since sweet peppers and tomatoes are on the dirty dozen list, it is preferable to purchase these organic. Also recommend using organic brown rice.

Grandpa Apples’ Favorite

Ingredients:
- 1 large organic apple
- 1 tablespoon (tbsp) organic grass-feed butter
- 1 teaspoon cinnamon
- 1 tbsp organic raisins
- 3 crushed pecans
- 1 tbsp honey
Instructions:
- Preheat oven to 350 degrees F.
- Place half of the butter, thinly shaved, in the bottom of a small baking dish, about six inches in diameter.
- Peel the apple, slice to about ¼ inch thick, then quarter. I like to use an apple-peeler-corer-slicer which is a big help. Layer the apples in the baking dish.
- Add cinnamon, raisins, crushed pecans, honey, and reaming ½ of butter.
- Bake covered at 350 degrees F until you are satisfied with the firmness of the apples, approximately 20 – 25 minutes. Enjoy!
